Ingredients
Wholewheat flour: 1 cup,
Salt to taste
Egg yolk: 1
Vegetable oil: 1 tsp
For the filling
Ghee: ¼ cup
Onion, finely chopped: 1
Lamb mince: 300 g
Salt to taste
Black peppercorns, freshly ground: To taste
Pumpkin, grated: 2 tbsp
Garlic paste: ¼ tsp
Yogurt, whisked: ½ cup
Method
Knead a hard dough with wholewheat flour, salt, egg yolk and water. Add oil and knead again; cover and keep aside for 30 minutes. Divide the dough into 12 equal portions. Roll each portion out into a thin sheet and cut into 12 X 12 cm squares.
For the filling: Heat the ghee in a pan; add onion and sauté. Add lamb mince, salt and pepper powder; stir-fry until the moisture evaporates. Add the pumpkin and mix well. Cook for 10 minutes on low heat until the lamb is cooked and the moisture evaporates, Place a portion of the lamb mixture into the centre of the square, fold up the sides and seal the ends. Steam the squares for 35-40 minutes or shallow fry till golden brown. Serve with yoghurt mixed with garlic paste, sprinkle freshly crushed pepper or sour cream.
